Asparagus is known to be a very healthy luxury vegetable enriched with lots of nutrient contents. One of the most important points to keep in mind while cooking asparagus is that we should not cook the vegetable in iron pots. The reason behind this is very simple; the tannins in the vegetable can very well react with iron and cause the discoloration of stalks. Another point to keep in mind is that we should not keep the vegetable stalks in the water for a long time, as this will make them soggy.
